The approach of this book is very similar to that of Warner & Hill (1979). Also E&I (1997) and contains many of the same chemicals in an organisation based on molecular definition. The author does not seem to have made extensive use of this source of data. Many of the entries have notes on synthesis and reactions and are often helpful, but are also very detailed.
Commentary on the aroma chemicals and their synthesis and their use in balsams, perfumes and flavourings is scattered through the course of the book and sometimes interspersed with detailed analyses, hence the different presentation styles of the entries. The book seems to be aimed at a specialist audience and does not include background material on chemistry of fragrant materials or flavour chemistry of natural materials.
This book is a 23 year update of the original and contains a lot of updated data on chemical composition of natural scent materials. I have not yet read this, so cannot comment on it as an update or re-edit.
This book is a very detailed work on all aspects of the chemistry of perfume and flavour materials. The author does include a very good appendix that discusses the chemistry of fragrances and flavours in more detail. It is sometimes a bit dry reading (he used to be the lecturer in the chemical basis of flavours and fragrances at the Royal College of Chemistry in London and even today his comments on some of the materials and reactions can be quite opinionated without the need for an academic tone). But it is well worth a read if one is serious about the chemistry of fragrance and flavour materials. Many of the older entries have been updated. Best of all is the index of perfume and flavour compounds which is an olfactory reference work, a great work of reference. The organisation of the books is not logical and it takes a while to find the chemicals you need. The book is a layout nemesis. I hated it when I first read it because I thought I was expected to read all the entries in the order in which they appear in the book. d2c66b5586
